Vomar brood - Royal Kaak

Vomar bakes 'the perfect bread' after a revision by Royal Kaak. This was our approach.

The tinbread line at Vomar Alkmaar is currently running at a capacity of approximately 3,000 loaves per hour. In addition, we have significantly reduced the baking and cooling time of all products. A result we are very proud of! In this blog we zoom in on our approach and ensuing results.

Vomar ’s question

The tinbread line at Vomar Alkmaar has been running since 2001. All components are produced by us. The line produces among other things sandwich bread, farmer’s bread and floor-baked bread. To continue to limit the risk of downtime as much as possible and to achieve a higher output, Vomar asked us to map out the mechanical and electrical risks of the line.

The challenge

The biggest challenge was to complete the revision of the line from a standstill in a really short period of time. This requires accurate planning and detailed coordination between the various disciplines. After the adjustments to the line were carried out, one of our baking technologists ensured a smooth start of production together with the Vomar team. In combination with an extension of the lifespan of the existing line, we achieved both better baking results and lower energy consumption.

Extensive revision

We first carried out an extensive overhaul on the existing production line and added a number of new elements to improve the line. To keep production loss as small as possible, the revision was conducted step by step. After the adjustments to the line were carried out, one of our baking technologists ensured a smooth start of production together with the Vomar team. In combination with an extension of the lifespan of the existing line, we achieved both better baking results and lower energy consumption.

Replacement of parts

After inspection, it turned out that both suction depanners also needed to be replaced. For this purpose we used a new needle depanner. We also installed a new air-conditioning unit in the proofer. In addition, a new belt washer was installed on the cooling tower and a new crate stacker was placed on the first floor in front of the crate washer. This allows the crate elevator to execute its stacks directly from the expedition and retrieve a new stack. The result? The installation processes considerably more crates than before.

After inspection of the electrical components, the necessary parts and systems were also upgraded or replaced because existing components were no longer available or discontinued, or had exceptionally long delivery times. We have chosen to keep a number of components in stock at Vomar to be able to quickly find a solution in the event of any calamities.
