Capacity

When designing our production line for bread, we always take the floor space at your company into account, as well as current and future needs. Did you know that our highly efficient line can reach a capacity of up to 54,000 breads per hour?

Raw Materials

Raw materials form the basis for every baking process. Whatever bread you bake, it is always important for us to know what kind of bread it is, where the recipe comes from and what ingredients have been used. At Kaak, we do not shy away from ingredients that have to be natural, sustainable, ecological or organic. The reason is that our silos and dosing systems offer full control over ingredients and processes.

The process

01

Mixing

The production line doses the desired ingredients from the silo into the MDD mixer.

Dough Make-Up

After this the unique Rolls & Buns line or sheeting technology starts where breads of any size are easily produced, as well as all kinds of other cut, round and shaped products. After the sheeting line, the machine places the breads on flat or dented baking trays.

Proofing

We will be happy to advise you on the trays best suited for your product. The dough pieces are moved from the sheeting line into the proofers and are then decorated in the decoration line (seeding or decorative scoring).

Baking

The oven you use determines the baking result to a large extent. There are several baking options. Your choice also depends on the type of bread you want and the consistency required in the appearance. Do you need a more artisanal product? Then choose to bake on a stone. We are happy to help you make the right choice.

Handling

Our production line transports the pans directly from the oven outlet to the depanner. There the system automatically unloads the freshly baked breads and sends the empty pans to the cleaning unit. They then move to the dough deposit section where the baking cycle begins again. Finished breads are moved on the production line through a cooling system and then to the packing and handling department.
